This is one of the most recurring topics of conversation among our clients. There are many reasons that come into play to choose one or the other, such as price, conservation, texture, flavor, etc. And the truth is that we can say that both options are good, since choosing between one or the other will depend on the use we are going to give to that seafood.
Obviously, seafood fresh from the sea provides a fresh and lively flavor, as if we were tasting a breath of the sea. But we must also take into account that they can cause us certain inconveniences in certain circumstances. For example, if we wait until the last minute to buy fresh seafood, we run the risk of running out of it because there was no good work that day or it has a higher price than usual.
On the other hand, if we decide to buy it a few days in advance so as not to run out of it, we risk it losing its freshness and even deteriorating due to the development of bacteria. To avoid encountering this setback, we can resort to two options; Buy fresh seafood and freeze it at home or buy it frozen.
If we decide to buy fresh seafood and freeze it, we must keep in mind that we must follow certain basic rules:
First, we must check that our freezer is four-star rated because those with a lower capacity are not suitable.
We will set the thermostat to the coldest position a few hours before adding the seafood, so that it freezes as quickly as possible. This way we will prevent ice crystals from spoiling it. After 24 hours, the freezer can be returned to a normal temperature, about -18 degrees.
For seafood such as crab, king crab, crabs and mussels, they must be cooked, dried with a clean cloth and placed in a freezer bag or vacuum packed and then frozen.
For the razor clams and clams, you must wash them well to remove the sand and place them raw in an airtight transparent freezer bag.
For shrimp, prawns, big prawns, crayfish and galleys we will follow the same steps as with clams and razor clams.
If our choice is ultra-frozen seafood, we must take into account that the freezing process is immediate upon capture, which makes the product extraordinarily similar to the fresh one.
